Lots of people have been asking for the recipe for the Coconut and Lime Raw Bites Viv made for me this week.
 

 
I am always searching for alternatives to sugary snacks on the hill and the zingy flavour of these are just perfect!

Coconut and Lime Raw Bites
 

 
Handful Almonds
 

 
Handful Cashews
 

 
Handful and half of dates
 

 
Zest and juice of 2 limes
 

 
Desicciated coconut for coating

Method
 

 
Blitz almonds and cashews in a processer til they are finely chopped, add dates, lime zest and juice, blitz again.
 

 
Roll in to small balls and coat in coconut.
 

 
Keep in fridge and eat soon!
